How to Make Corn Soup (Hominy) from Scratch

Dry Indian Corn (popcorn) preferably for a year by hanging it in a dry place. After a year shell the corn from the cob by hand or a shucker.

To prepare: Use hardwood ashes (hard maple for example). Sift the ashes through a colander or screen to separate the ashes from the larger chunks of wood. It should be a very fine powder when sifting is done.

Boil the corn kernels and ashes together by using a measure of 1 cup of ashes to 1 cup of corn in water. (Mixture almost looks like cement). Bring to boiling and always keep stirring so the mixture doesn't stick to the bottom of the pan. More water may be added as needed.

Boil until the hulls start falling away from the corn. Then take the corn and spread out on a screen and rinse thoroughly. (You will need a lot of water for this). While rinsing, use your hands to rub across the corn to separate the hulls from the corn.

To cook: You have to parboil the corn 2-3 times, changing the water or rinsing the corn each time. Then cook as usual with pork or meat of choice.
